chia seed pudding recipe

I made my first ever chia seed pudding this morning. We’ve been on a low carb diet (keto) for several months now to help others understand how this diet can help halt or reverse their (or their dog’s) cancer. Needless to say, I was getting suuuuuper tired of butter coffee for breakfast every day! Chia seeds are a huge source of balanced omega 3s and are almost no net carbs so it’s a win win for us. This was so easy too! Next, I’m going to make some for the dogs 😬🐶🙌. Here’s how I made this bowl:

🥣 1.5 cups of canned coconut milk (some solids and some liquids)
🥣 1/4 cup organic chia seeds
🥣 1 frozen açaí packet
🥣 4 drops of liquid stevia or other sweetener/substitute
🥣 1/2 tsp pure vanilla extract
🥣 2 TBS plain Greek yogurt

TOPPINGS
🥄 TBS dried unsweetened coconut flakes
🥄 1 tsp cocoa nibs
🥄 blueberries
🥄 raspberries
Mix milk and chia seeds and let sit for an hour or overnight to form a gel. Blend ingredients except yogurt in a blender. Add more milk if too thick. Spoon yogurt into a clear glass (its more fun to look at!) add açaí/chia mixture on top. Top with toppings and you’re done 🙌!
